- Vegetable or bone broth - 300 g - Dry white wine - 150 ml - Carnaroli rice - 100 g - Unsalted butter - 60 g - Eringi mushrooms - 100 g - Parmesan cheese - 20 g
Method of cooking

Sauté the rice in olive oil for 2 minutes, then add the wine. When 70% of the wine evaporates, gradually add broth, stirring constantly, until the rice reaches an al dente texture.

Slice the eringi thinly and sauté them until golden brown in either cream or olive oil.

Add cream, parmesan, and mix with the sautéed eringi into the rice.
