What are Eryngi?

Eringi mushrooms are tasty, safe, and beneficial fungi. They are naturally found in the steppes of Asia, countries around the Mediterranean Sea, and North Africa. Traditionally used in Pan-Asian cuisine, their consumption has significantly increased in Europe and North America in recent times.
What is the secret behind the popularity of eringi mushrooms?
Three reasons contribute to their popularity:

Some believe that eringi mushrooms resemble forest white mushrooms. While there is a visual similarity, true mushroom enthusiasts find it challenging to confuse the two. However, in terms of valuable compounds and nutritional content, they are nearly akin siblings.

The protein content in king oyster mushrooms reaches 25%. The nutritional value of these mushrooms approaches that of meat and dairy products, surpassing most vegetables by a significant margin. They boast a complete complex of B-group vitamins, ascorbic acid, and some elements from the "useful" section of Mendeleev's table – adding to the impressive profile of these remarkable mushrooms.

A very important fact is that after heat treatment, eryngi mushrooms lose only 5% of the total amount of biologically active substances, unlike other mushrooms, where this figure reaches 50%.

Most importantly, eringi mushrooms are a true delicacy! Undoubtedly, they surpass in taste any "cultivated" mushrooms and are not inferior to the renowned forest white mushrooms. Perhaps that's why one of the unofficial names for eringi is the "boletus of the steppes".

Процес вирощування ерінгів

Sterilization of containers with a substrate. During sterilization, all bacteria and molds dangerous for the further technological process die in the substrate.

Adding to the substrate the most important ingredient, seed material in the mushroom world - mycelium.

Jars with substrate and mycelium are sent to a room with full control temperature and humidity, where the mycelium begins to grow in the substrate. This stage lasts 34-35 days.

Moving to the growth chamber, where at a certain temperature and humidity level, mushrooms begin to grow. This process takes an average of 21 days. After that, the mushrooms are cut, packed and sent to the shelf.
