Avocado toast with
eringi mushrooms

Ingredients:

- Avocado - 1 piece
- Eringi mushrooms - 2 pieces
- Tomato - 1 piece
- Lemon - 1 piece
- Sunflower oil
- Olive oil

Method of cooking

1. Dice eringi mushrooms.

2. Add salt, pepper, and 1-2 tablespoons of olive oil to them.

3. Sauté the eringi mushrooms in sunflower oil until golden brown.

4. Slice the tomato into rounds.

5. Slice the bread about 2 cm thick.

6. Finely chop the avocado.

7. Add salt, pepper, and 1-2 tablespoons of olive oil to the avocado. Squeeze the lemon into the mixture.

8. Whisk the mixture.

9. Sauté the bread in olive oil for 1-2 minutes.

10. Place the tomato on the bread.

11. Spread the avocado mixture.

12. Arrange the eringi mushrooms on top. Enjoy!
